A comforting and flavorful hot pot inspired by the popular Korean street food, Tteokbokki. Chewy rice cakes, savory fish cakes, and ramen noodles simmer in a rich and spicy gochujang-based broth, perfect for sharing on a cold evening.
In a large pot or Dutch oven, combine water (or chicken broth), gochujang, gochugaru (if using), soy sauce, sugar, and minced garlic. Bring to a simmer over medium heat, stirring until the gochujang is dissolved.
Add the sliced onion and Korean rice cakes to the pot. Simmer for about 10 minutes, or until the rice cakes become soft and chewy.
Add the Korean fish cakes and ramen noodles to the pot. Cook for about 5 minutes, or until the ramen noodles are cooked through and the fish cakes are heated through.
Stir in sesame oil and season with black pepper to taste.
Divide the hot pot into bowls. Top with halved hard-boiled eggs and chopped green onions.
Serve immediately and enjoy!
