**Make the Tortilla Chips:** Cut each tortilla into 6 wedges. Toss with 1 tablespoon of vegetable oil and salt. Arrange in a single layer on a baking sheet.
Bake for 10-15 minutes, or until crispy and golden brown. Keep a close eye on them to prevent burning. Remove from oven and set aside.
**Prepare the Chorizo and Queso Fundido:** In a large skillet, cook the chorizo over medium heat, breaking it up with a spoon, until browned and cooked through. Drain any excess grease.
Add the chopped onion, jalapeño (if using), and garlic to the skillet with the chorizo. Cook for 3-5 minutes, or until the onion is softened.
Reduce the heat to low. Sprinkle the shredded Oaxaca cheese evenly over the chorizo mixture.
