**Prepare the Ginger Biscotti:**

In a bowl, whisk together flour, baking powder, and salt.
In a separate bowl, cream together the softened butter and sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract and ground ginger.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the crystallized ginger.
Divide the dough in half. On a lightly floured surface, shape each half into a log about 8 inches long and 2 inches wide.
Place the logs on a baking sheet lined with parchment paper.
Bake for 25-30 minutes, or until lightly golden.
Remove from oven and let cool slightly.
Reduce oven temperature to 325°F (160°C).
Using a serrated knife, cut the logs into 1/2-inch thick slices.
Arrange the biscotti slices on the baking sheet, cut-side up.

Let cool completely on a wire rack.
**Prepare the Chai-Spiced Ice Cream (Optional):**
Slightly soften the vanilla ice cream. Gently stir in the chai spice blend and heavy cream (if using).
Return to freezer to harden slightly.

Spoon the chai-spiced vanilla ice cream into dessert bowls or glasses.
Immediately pour a hot shot of espresso over each serving of ice cream.
