
A fast and satisfying kimchi jjigae perfect for weeknights. Featuring ramen noodles and sliced Spam for a classic Korean comfort food combination, topped with a slice of American cheese for extra richness.
In a pot or Dutch oven, heat a tablespoon of oil (optional). Add the kimchi and onion and sauté for 3-5 minutes, until the kimchi starts to soften and caramelize slightly.
Add the garlic, gochujang, and gochugaru (if using) and sauté for another minute until fragrant.
Pour in the kimchi juice, chicken broth (or water), and soy sauce. Bring to a boil.
Add the Spam slices and tofu (if using). Reduce heat to medium and simmer for 5-7 minutes, allowing the flavors to meld.
Add the ramen noodles and cook according to package directions, usually 2-3 minutes, until the noodles are tender. Be careful not to overcook them.
Taste and adjust seasonings as needed. Add a pinch of sugar if the jjigae is too sour or spicy.
Ladle the kimchi jjigae into bowls. Top each bowl with a slice of American cheese and chopped green onions.
Serve immediately.
