**Prepare the Chilli Sauce:** In a blender or food processor, combine the red chillies, garlic, ginger, rice vinegar, soy sauce, honey, tomatoes and sesame oil. Blend until smooth. Taste and adjust seasoning as needed.
**Prepare the Fritter Mixture:** Roughly mash the cooked Jersey Royal potatoes in a large bowl. Leave some texture for a rustic feel.
Add the sweetcorn kernels, chopped spring onions, and coriander to the mashed potatoes.
In a separate small bowl, whisk the egg and Jersey milk together.
Pour the egg mixture into the potato and sweetcorn mixture. Add the flour, salt, and pepper. Mix well until everything is combined.
Heat the Jersey butter in a large frying pan over medium heat.
Spoon approximately 2 tablespoons of the fritter mixture into the hot pan for each fritter. Gently flatten them slightly.
Cook the fritters for about 4-5 minutes on each side, or until golden brown and cooked through.
Remove the fritters from the pan and place them on a plate lined with paper towels to drain excess oil.
Serve the Jersey Royal potato and sweetcorn fritters warm with the homemade chilli sauce on the side.
