Delicious and simple grilled skewers featuring Jersey Royal potatoes and courgette, marinated in a fragrant garlic, herb, and olive oil mixture. Perfect as a snack or side dish.
Preheat your grill to medium heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
In a large mixing bowl, whisk together the olive oil, minced garlic, rosemary, thyme, lemon juice, salt, and pepper.
Add the Jersey Royal potatoes and courgette chunks to the bowl with the marinade. Toss well to ensure they are evenly coated. Let marinate for at least 15 minutes, or up to 1 hour in the refrigerator.
Thread the potatoes and courgette chunks onto the skewers, alternating between the two. Ensure not to pack them too tightly for even cooking.
Place the skewers on the preheated grill. Grill for about 25-30 minutes, turning occasionally, until the potatoes are tender and slightly charred and the courgette is cooked through.
Remove the skewers from the grill and let them rest for a few minutes before serving.

Serve with a dollop of Greek yogurt or a squeeze of lemon juice.
You can use other vegetables like bell peppers or red onion on the skewers as well.
To check if the potatoes are done, pierce one with a fork. It should be tender and easily pierced.
