Preheat oven to 350°F (175°C). Spread the chopped nuts on a baking sheet and toast for 5-7 minutes, or until fragrant. Be careful not to burn them.
In a large bowl, combine the rolled oats, toasted nuts, mixed seeds, dried cranberries (or apple), cinnamon, ginger, and salt.
In a separate microwave-safe bowl, combine the Jersey Black Butter and melted Jersey Butter. Microwave for 30 seconds, or until softened and easily mixed.
Add the honey to the Black Butter mixture and stir well to combine.
Pour the wet ingredients into the dry ingredients and mix thoroughly until everything is evenly coated.
Line a baking sheet with parchment paper. Roll the mixture into 1-inch balls.
Place the energy bites on the prepared baking sheet.
Bake for 10-12 minutes, or until lightly golden. Reduce oven temperature to 300 F if the bites start to brown to quickly.
Let the energy bites cool completely on the baking sheet before transferring them to an airtight container.
Store in an airtight container at room temperature for up to 5 days, or in the refrigerator for up to 2 weeks.

For a richer flavor, toast the oats lightly in a dry skillet before adding them to the other ingredients.
Add a scoop of Jersey Royal potato protein powder for an extra boost of protein.
Feel free to experiment with other dried fruits, nuts, and seeds to customize the flavor to your liking.
If the mixture is too wet, add more oats. If it's too dry, add a little more honey.
To make them vegan, substitute the Jersey butter and honey with vegan alternatives like coconut oil and maple syrup.
