In a food processor, combine the dates, nuts, apple, melted butter, mashed potato, and cinnamon (if using).
Process until the mixture is finely chopped and starts to clump together.
Add the Jersey Black Butter and pulse a few times until just combined. Do not over-process.
Using your hands, roll the mixture into small balls (about 1 tablespoon each).
Roll each ball in desiccated coconut to coat.
Place the energy balls on the prepared baking sheet.
Bake for 25-30 minutes, or until lightly toasted. This step is optional but provides a nuttier flavour. Skip it for a softer texture.
Let the energy balls cool completely on the baking sheet before storing.
