Crispy and flavorful fritters infused with the unique taste of Jersey Black Butter and sweet local apples, finished with a dusting of cinnamon sugar. A true taste of Jersey!
In a large bowl, combine the mashed Jersey Royal potatoes, flour, baking powder, and caster sugar. Mix well.
Add the softened Jersey Black Butter and diced apple to the dry ingredients. Mix until evenly distributed.
In a separate medium bowl, whisk together the Jersey milk and egg. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
Heat the vegetable oil in a deep fryer or large pot to 180°C (350°F).
Carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the fryer. Fry for 3-4 minutes, or until golden brown and crispy, turning occasionally.
Remove the fritters with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
While the fritters are still warm, mix the cinnamon and granulated sugar in a small bowl. Sprinkle the cinnamon sugar mixture generously over the fritters.
Serve immediately and enjoy!

For extra flavor, add a pinch of nutmeg or allspice to the fritter batter.
If you don't have a deep fryer, you can use a large pot with at least 3 inches of oil. Be sure to monitor the oil temperature carefully.
For a lighter fritter, you can use self-raising flour instead of all-purpose flour and baking powder.
