Savory scones packed with the sweet-tart flavor of local Jersey apples and sharp cheddar cheese. Perfect for a snack, brunch, or alongside soup.
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, sugar, and salt.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Stir in the shredded cheddar cheese and diced apple.
Gradually add the cold milk, mixing until just combined. Do not overmix.
Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick circle.
Using a sharp knife or biscuit cutter, cut the dough into 8 wedges or rounds.
Place the scones onto the prepared baking sheet.
Optional: Brush the tops of the scones with a beaten egg for a golden finish.
Bake for 20-25 minutes, or until golden brown.
Let cool slightly on the baking sheet before serving.

For the flakiest scones, use very cold ingredients and avoid overmixing the dough.
If you don't have a pastry blender, you can use your fingertips to cut in the butter. Work quickly to keep the butter cold.
Feel free to experiment with different varieties of Jersey apples or cheddar cheeses.
Serve warm with butter or a dollop of cream cheese.
