Heat sesame oil in a large pot or Dutch oven over medium heat.
Add sliced onions and cook, stirring occasionally, until softened and lightly caramelized. This will take about 20-25 minutes. Be patient and don't rush the caramelization process.
Pour in the dashi broth and bring to a simmer.
Add soy sauce, mirin, and sake (if using). Taste and adjust seasoning with salt, if needed.
Simmer for another 5 minutes to allow the flavors to meld.
Ladle the soup into bowls and garnish with sliced scallions and toasted sesame seeds. Serve hot.
