A light and refreshing Mediterranean dessert featuring creamy Greek yogurt, sweet honey, crunchy walnuts, and chewy figs.
Lightly toast the chopped walnuts in a small, dry skillet over medium heat for 3-5 minutes, or until fragrant, stirring occasionally. Be careful not to burn them. Remove from skillet and let cool.
In a small bowl, combine the honey, lemon zest (if using), and cinnamon (if using). Mix well.
In each of the four serving glasses or bowls, layer Greek yogurt, toasted walnuts, and quartered figs. Repeat layers until all ingredients are used.
Drizzle each parfait with the honey mixture.
Serve immediately or chill for later.

For a richer flavor, use full-fat Greek yogurt.
If you don't have dried figs, you can use fresh figs when they are in season. Quarter or slice them and add them to the parfait.
Other nuts, such as almonds or pistachios, can be substituted for walnuts.
This parfait is excellent after a Mediterranean meal like grilled chicken with vegetables and a lemon-herb vinaigrette, continuing the healthy theme with a light and refreshing finish.
