If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
In a medium bowl, whisk together the minced garlic, chopped parsley, lemon juice, olive oil, red pepper flakes (if using), salt, and pepper.
Add the shrimp to the bowl and toss to coat evenly. Cover and marinate in the refrigerator for at least 15 minutes, or up to 30 minutes. Do not marinate for too long, as the lemon juice can start to 'cook' the shrimp.
Preheat your grill to medium-high heat.
Thread the shrimp onto the skewers, about 4-5 shrimp per skewer.
Grill the shrimp skewers for 2-3 minutes per side, or until the shrimp are pink and opaque and slightly charred. Be careful not to overcook the shrimp, as they will become tough.
Remove the skewers from the grill and serve immediately. Drizzle with any remaining marinade or a squeeze of fresh lemon juice.
