A comforting and flavorful baked pasta dish featuring sweet, roasted tomatoes, fresh basil, and rich Jersey cream for an extra decadent touch.
Preheat oven to 400°F (200°C).
Cook pasta according to package directions until al dente. Drain and set aside.
While the pasta is cooking, toss the halved cherry tomatoes and minced garlic with olive oil, salt, pepper, and red pepper flakes (if using) on a baking sheet.
Roast the tomatoes in the preheated oven for 20-25 minutes, or until they are softened and slightly caramelized.
In a large bowl, combine the cooked pasta, roasted tomatoes and garlic (including any pan juices from roasting), chopped fresh basil, Jersey cream, and grated Parmesan cheese. Mix well to combine.
Pour the pasta mixture into a greased 9x13 inch baking dish.
Sprinkle additional Parmesan cheese on top.
Bake in the preheated oven for 15-20 minutes, or until bubbly and golden brown on top.
Let cool for a few minutes before serving. Garnish with fresh basil leaves.
