**Fill the Wontons:** Lay out a wonton wrapper on a clean surface. Place about 1 teaspoon of the turkey filling in the center of the wrapper. Brush the edges of the wrapper with the beaten egg. Fold the wrapper in half diagonally to form a triangle, pressing the edges firmly to seal. Bring the two bottom corners of the triangle together, overlapping them slightly, and press to seal. Repeat until all the filling is used.
**Make the Soup Base:** In a large pot or Dutch oven, combine the chicken broth, soy sauce, cinnamon stick, cloves, and star anise (if using). Bring to a boil over medium-high heat, then reduce the heat to low and simmer for at least 15 minutes to allow the spices to infuse the broth. This will create the Christmas-spiced aromatic base.
