In a large pot or Dutch oven, combine gochujang, gochugaru, soy sauce, minced garlic, and sugar. Mix well to form a paste.
Add chicken broth to the pot and bring to a simmer over medium heat.
Add the kimchi, Spam, hot dogs, and tofu to the broth. Bring to a simmer and cook for about 10 minutes, allowing the flavors to meld.
Add the ramen noodles to the pot. Cook according to package directions, usually about 3-5 minutes, or until the noodles are tender.
Once the noodles are cooked, gently stir in the optional mushrooms and baked beans (if using).
Top the hot pot with slices of American cheese. Cover the pot and let the cheese melt for a minute or two.
Garnish with sliced green onions and serve immediately. The hot pot can be served directly from the pot at the table.
