Preheat oven to 350°F (175°C).
In a large bowl, combine the almonds, cashews, and olive oil. Toss to coat evenly.
In a small bowl, whisk together the curry powder, turmeric, ground coriander, ground cumin, garlic powder, salt, and pepper.
Sprinkle the spice mixture over the nuts and toss thoroughly to ensure they are evenly coated. Add the chopped dried apricots (if using) and toss again.
Spread the nuts in a single layer on a baking sheet.
Roast in the preheated oven for 15-20 minutes, or until fragrant and golden brown, stirring halfway through to prevent burning. Keep a close eye on them as they can burn quickly.
Remove from the oven and let cool completely on the baking sheet before serving. This will allow them to crisp up further.
Store in an airtight container at room temperature.
