Preheat oven to 200°C (180°C fan/ Gas Mark 6) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, salt, and caster sugar.
In a separate bowl, combine the mashed Jersey Royal potatoes, Jersey milk, and egg.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
Gently fold in the diced Jersey apples.
Drop spoonfuls of the batter onto the prepared baking sheet, leaving space between each fritter.
Brush the tops of the fritters with melted Jersey butter.
Bake for 20-25 minutes, or until golden brown and cooked through. A toothpick inserted into the center should come out clean.
While the fritters are baking, prepare the cinnamon sugar. In a small bowl, mix together the cinnamon and caster sugar.
Once the fritters are out of the oven, immediately sprinkle generously with the cinnamon sugar mixture.
Serve warm and enjoy!
