A sweet and savory side dish featuring Brussels sprouts and bacon, threaded onto skewers and roasted with maple syrup.
Preheat oven to 400°F (200°C). If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
In a large bowl, toss the Brussels sprouts with olive oil, balsamic vinegar, salt, and pepper.
Thread the Brussels sprouts and bacon pieces onto the skewers, alternating between Brussels sprouts and bacon. Aim for about 5-6 pieces per skewer.
Arrange the skewers on a baking sheet lined with parchment paper.
Roast in the preheated oven for 20 minutes.
Remove the baking sheet from the oven and brush the skewers with maple syrup. Return to the oven and roast for another 10 minutes, or until the bacon is crispy and the Brussels sprouts are tender and caramelized.
Remove from the oven and serve immediately.

For extra flavor, add a pinch of red pepper flakes to the Brussels sprouts before roasting.
If the bacon starts to burn before the Brussels sprouts are tender, tent the baking sheet with foil.
These skewers are best served immediately. Leftovers can be reheated, but the bacon may not be as crispy.
