A spicy and savory twist on a classic grilled cheese, featuring sliced tamales and pepper jack cheese.
Slice the tamales into 1/4-inch thick rounds.
Butter one side of each slice of bread.
Place two slices of bread, butter-side down, on a griddle or skillet over medium heat.
Top each slice of bread with 2 slices of pepper jack cheese.
Arrange the tamale slices evenly over the cheese on one slice of bread.
Top with the other slice of bread, butter-side up.
Cook for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
Remove from the griddle and let cool slightly before slicing in half and serving.
Serve hot with optional salsa for dipping.

For extra flavor, add a thin layer of your favorite salsa to the sandwich before grilling.
If you don't have pepper jack cheese, use Monterey Jack or cheddar cheese and add a pinch of cayenne pepper.
You can use any type of tamale for this recipe, but pork or chicken tamales work best.
For a richer flavor, use clarified butter or ghee instead of regular butter.
