Reduce the heat to low. Create small wells in the sucuk using a spatula. Crack an egg into each well.
Sprinkle with red pepper flakes and black pepper. Add a pinch of salt to each egg, being careful not to over-salt.
Cover the skillet and cook for 3-5 minutes, or until the egg whites are set but the yolks are still runny (or cooked to your preference).
Garnish with fresh parsley (if using).
Serve immediately with warm flatbread for dipping.
