In a separate bowl, cream together the softened butter and light brown sugar until light and fluffy.
Gradually beat in the lightly beaten eggs.
Fold in the date mixture and the sifted self-raising flour until just combined. Be careful not to overmix.
Divide the batter evenly among the prepared pudding basins or ramekins.
Bake in the preheated oven for 30-40 minutes, or until a wooden skewer inserted into the center comes out clean.
While the puddings are baking, make the butterscotch sauce. In a saucepan over medium heat, melt the butter. Add the double cream and light brown sugar. Bring to a simmer, stirring constantly, until the sugar is dissolved and the sauce has thickened slightly (about 5-7 minutes).
Once the puddings are cooked, let them cool slightly in the basins for a few minutes before inverting them onto plates.
Pour the warm butterscotch sauce over the puddings and serve immediately with a generous dollop of clotted cream.

For an even richer flavor, add a tablespoon of dark rum or coffee liqueur to the date mixture.
