Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Wash and thoroughly dry the okra. Trim off the tops and tails. Cut the okra into 1/2-inch thick fries.
In a large bowl, combine the chickpea flour, rice flour, chaat masala, red chili powder (if using), turmeric powder, amchur (if using), ginger-garlic paste, and salt. Mix well.
Add the okra fries to the bowl with the dry ingredients. Toss well to coat the okra evenly with the spice mixture.
Drizzle the vegetable oil over the okra fries and toss again to ensure they are lightly coated with oil. Make sure the okra fries aren't too crowded.
Spread the okra fries in a single layer on the prepared baking sheet. Avoid overcrowding.
Bake for 20-25 minutes, flipping the fries halfway through, or until they are golden brown and crispy. Check for doneness at 20 minutes and add more time if needed.
Remove from the oven and immediately drizzle with lemon juice. Toss gently.
Serve the spiced okra fries hot as a side dish or appetizer.
