Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper for easier cleanup (optional).
Rinse the figs gently and pat them dry.
Wrap each fig with a slice of Serrano ham, ensuring the fig is mostly covered. Secure with a toothpick if needed.
Arrange the wrapped figs on the prepared baking sheet.
Bake for 10-15 minutes, or until the Serrano ham is slightly crisp and the figs are warmed through. Watch carefully to prevent burning.
While the figs are baking, prepare the balsamic reduction. In a small saucepan, combine the balsamic vinegar and honey (if using).
Bring the balsamic vinegar to a simmer over medium heat. Reduce the heat to low and simmer for 15-20 minutes, or until the vinegar has reduced by half and thickened to a syrupy consistency. Stir occasionally to prevent sticking.
Remove the balsamic reduction from the heat and let it cool slightly. It will thicken further as it cools.
Once the figs are out of the oven, remove any toothpicks used to secure the ham.
Arrange the Serrano ham-wrapped figs on a serving platter.
Drizzle the balsamic reduction generously over the figs. Season with a grind of fresh black pepper.
Serve immediately and enjoy!
