
Individual meatloaves packed with chili flavor and topped with a sweet and tangy BBQ glaze. Perfect for a weeknight dinner!
Preheat oven to 375°F (190°C).
In a large bowl, combine ground beef, bread crumbs, milk, egg, onion, garlic, chili powder, cumin, smoked paprika, salt, and pepper. Mix gently with your hands until just combined. Do not overmix.
Divide the mixture into 4 equal portions. You can either shape them into individual meatloaves and place them on a baking sheet or press the mixture into a lightly greased muffin tin for more uniform shapes.
In a small bowl, whisk together BBQ sauce, brown sugar, and apple cider vinegar to create the glaze.
Bake the meatloaves for 20 minutes. Remove from oven and brush generously with the BBQ glaze.
Return to the oven and bake for another 10 minutes, or until the meatloaves are cooked through and the glaze is bubbly and slightly caramelized. Internal temperature should reach 160°F (71°C).
Let the meatloaves rest for a few minutes before serving with mashed potatoes or roasted vegetables.

If you don't have bread crumbs, you can use crushed crackers.
