Delicious and flavorful grilled lamb kofta skewers served with a refreshing tzatziki sauce and warm pita bread – a perfect Mediterranean lunch or dinner!
**Prepare the Kofta:** In a large mixing bowl, combine ground lamb, chopped onion, parsley, mint, minced garlic, cumin, coriander, paprika, salt, and pepper. Mix well with your hands until all ingredients are evenly distributed.
**Shape the Kofta:** Divide the lamb mixture into 12-16 equal portions. Shape each portion into a small sausage shape around a skewer. If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
**Prepare the Tzatziki Sauce:** In a small bowl, combine Greek yogurt, grated cucumber (squeeze out excess liquid from the cucumber before adding), minced garlic, dill, lemon juice, olive oil, salt, and pepper. Stir well and refrigerate for at least 15 minutes to allow the flavors to meld.
**Grill the Kofta:** Preheat your grill to medium-high heat. Place the kofta skewers on the grill and cook for approximately 5-7 minutes per side, or until the lamb is cooked through and nicely browned. Ensure the internal temperature reaches 160°F (71°C).
**Warm the Pita Bread:** While the kofta is grilling, warm the pita bread. You can do this on the grill for a few seconds per side, in a dry skillet, or in a toaster.
**Serve:** Serve the grilled lamb kofta skewers with warm pita bread and a generous dollop of tzatziki sauce. You can also add a side salad or some chopped vegetables for a complete meal.

For extra flavor, add a pinch of red pepper flakes to the lamb mixture.
Don't overcook the lamb, as it can become dry. Use a meat thermometer to ensure it's cooked to the correct temperature.
If you don't have a grill, you can cook the kofta skewers in a preheated oven at 400°F (200°C) for about 20-25 minutes, turning halfway through.
Make the tzatziki sauce ahead of time to allow the flavors to develop.
