**Prepare the Dalgona Candy:** For each serving of Dalgona, place 1 tablespoon of granulated sugar in a small saucepan over medium-low heat. Melt the sugar, stirring constantly with a chopstick or wooden skewer until it turns a light amber color (be careful not to burn it!).
Once the sugar is fully melted and amber-colored, remove the saucepan from the heat. Immediately add a pinch (about 1/4 teaspoon) of baking soda to the melted sugar and stir vigorously and quickly until the mixture becomes a light, fluffy caramel color. This happens quickly!
Pour the mixture onto a piece of parchment paper lined cookie sheet. Let it cool completely and harden. Repeat steps 1-3 for each serving.
Once the Dalgona candy has cooled and hardened, break it into small, bite-sized pieces.
**Prepare the Coffee Broth:** In a medium saucepan, combine the milk (or milk alternative), instant coffee, brown sugar, vanilla extract, and cinnamon (if using).
Heat the mixture over medium heat, stirring occasionally, until it is warmed through and the sugar is dissolved. Do not boil. If using, stir in the heavy cream.
**Assemble the Hot Pot:** Pour the warm coffee broth into the small hot pot or fondue pot. Turn on the heat source to keep the broth warm.
Arrange the broken Dalgona candy pieces around the hot pot for each person to add to their coffee as desired.
Provide wooden skewers or long spoons for easy retrieval of the Dalgona candy from the pot.

The dalgona candy will melt into the coffee over time, creating a sweeter, more caramel-like flavor.
To create the classic Dalgona shape, press a cookie cutter into the mixture before it cools. However, for this recipe, breaking the Dalgona into pieces is preferred.
