A flavorful pork tenderloin marinated in a kimchi jjigae-inspired sauce and roasted until tender and juicy.
Preheat oven to 400°F (200°C).
In a bowl, combine the chopped kimchi, kimchi juice, gochujang, gochugaru (if using), soy sauce, sesame oil, minced garlic, grated ginger, and sugar. Mix well to create the marinade.
Place the pork tenderloin in a resealable plastic bag or a baking dish. Pour the kimchi marinade over the pork, ensuring it is well coated. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
Remove the pork tenderloin from the marinade (reserve the marinade). Place the pork in a baking dish. Pour the reserved marinade over the pork.
Roast the pork tenderloin in the preheated oven for 25-30 minutes, or until a meat thermometer inserted into the thickest part registers 145°F (63°C).
Remove the pork tenderloin from the oven and let it rest for 10 minutes before slicing.
Slice the pork tenderloin and garnish with sliced green onions. Serve with rice and your favorite Korean side dishes.

For a spicier flavor, add more gochujang or gochugaru.
Marinating the pork overnight will result in a more flavorful and tender result.
Serve with a side of ssamjang or gochujang for dipping.
Make sure to check the gochujang label, as some brands may contain wheat. Choose a gluten-free variety if needed.
