1. Boil the Jersey Royal potatoes in salted water until tender. Drain well and return to the saucepan.
2. Mash the potatoes thoroughly using a potato ricer or masher. Add the Jersey milk and butter and mix until smooth and creamy. Season with salt and pepper to taste.
3. Gently fold in the Jersey crab meat, chopped parsley, chives, and optional seasonal greens into the mashed potato mixture. Be careful not to overmix.
4. Allow the potato and crab mixture to cool slightly. Once cooled, shape the mixture into small, cylindrical croquettes (about 2-3 inches long).
5. Prepare three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
6. Dredge each croquette in flour, then dip in the beaten egg, and finally coat evenly with breadcrumbs. Ensure the croquettes are fully coated for a crispy finish.
7. Heat the vegetable oil in a deep fryer or large pot to 180°C (350°F).
8. Carefully fry the croquettes in batches until golden brown and crispy on all sides (approximately 3-4 minutes per batch). Do not overcrowd the fryer.
9. Remove the croquettes with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
10. While the croquettes are frying, prepare the wasabi mayo by combining the mayonnaise, wasabi paste, and lemon juice in a small bowl. Mix well and adjust the amount of wasabi to your preference.
11. Serve the crispy Jersey Royal potato and Jersey crab croquettes immediately with the spicy wasabi mayo on the side for dipping.
