In a medium bowl, whisk together the cider vinegar, Dijon mustard, and honey.
Gradually whisk in the olive oil until the vinaigrette is emulsified and smooth. Season with salt and pepper to taste.
In a large bowl, gently combine the crab meat, diced apples, celery, red onion, and parsley.
Pour about half of the cider vinaigrette over the salad and gently toss to coat. Add more vinaigrette to taste, if desired. Be careful not to overdress the salad.
Arrange baby spinach or mixed greens on individual plates.
Spoon the crab and apple salad over the greens.
Serve immediately. The salad is best enjoyed fresh.
