In a large bowl, combine the shredded Jersey cabbage, chopped apple, and chopped kimchi. Squeeze out excess liquid from kimchi after chopping.
In a separate bowl, whisk together the flour, cornstarch, egg, cold water, soy sauce, and sesame oil until a smooth batter forms. Season with salt and pepper to taste.
Add the batter to the cabbage, apple, and kimchi mixture. Stir well to combine, ensuring all ingredients are coated.
Heat vegetable oil in a large frying pan or skillet over medium heat.
Once the oil is hot, drop spoonfuls of the fritter mixture into the pan, being careful not to overcrowd it.
Fry the fritters for 3-4 minutes per side, or until golden brown and crispy.
Remove the fritters from the pan using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
While the fritters are frying, prepare the sesame mayonnaise by combining the mayonnaise and sesame oil in a small bowl. Mix well.
