Make pastry: pulse flour, butter, and sugar in food processor until breadcrumb texture. Add egg yolk and 2 tbsp cold water, pulse until dough forms. Wrap and chill 30 minutes.
Preheat oven to 180°C (160°C fan). Roll out pastry and line a 23cm tart tin. Prick base with fork, line with parchment and baking beans. Blind bake 15 minutes.
Remove beans and parchment, bake 5 minutes more until lightly golden. Remove from oven and reduce temperature to 160°C (140°C fan).
Spread Jersey black butter evenly over pastry base.
Whisk together eggs, cream, and brown sugar. Pour over black butter. Bake 30-35 minutes until just set with a slight wobble. Cool completely before serving.
