Preheat oven to 180°C (160°C Fan/ Gas Mark 4). Grease and line an 8x12 inch baking pan with parchment paper.
In a large mixing bowl, combine the rolled oats, flour, brown sugar, and baking powder.
Add the cold, cubed Jersey butter to the dry ingredients. Use your fingertips or a pastry blender to rub the butter into the mixture until it resembles coarse breadcrumbs.
Divide the oat mixture in half. Press half of the mixture firmly into the prepared baking pan to form the base.
Peel, core, and chop the apples into small pieces. In a saucepan, gently cook the apples with the lemon juice, mashed potato and cinnamon (if using) until softened but still holding their shape, about 5-7 minutes.
Spread the Jersey Black Butter evenly over the oat base.
Spoon the cooked apple mixture evenly over the Black Butter layer.
Sprinkle the remaining oat mixture evenly over the apple filling.
Brush the top of the crumble with Jersey milk for a golden finish.
Bake in the preheated oven for 25-30 minutes, or until the crumble is golden brown and the filling is bubbling.
Let the bars cool completely in the pan before lifting them out using the parchment paper and cutting them into squares.
