Add the rolled oats, diced apples, cinnamon (if using), and salt to the saucepan. Mix everything together until the oats are evenly coated.
Pour the mixture into the prepared baking tray and press down firmly to create an even layer. A spatula or the back of a spoon works well.
Bake in the preheated oven for 25-30 minutes, or until golden brown and slightly firm to the touch. The edges should be starting to caramelize.
Remove from the oven and let cool completely in the tray before cutting into squares or bars. This is important for them to firm up properly.
