Preheat your oven to 180°C (350°F). Grease a 9-inch baking dish with Jersey butter.
Arrange the sliced apples evenly in the prepared baking dish, then scatter the blackberries over the apples.
In a mixing bowl, whisk together the Jersey milk, melted Jersey butter, eggs, sugar, Jersey Royal potato starch, vanilla extract (if using), and salt until smooth and well combined.
Pour the batter evenly over the apples and blackberries.
Bake in the preheated oven for 30-35 minutes, or until the clafoutis is puffed and golden brown, and a toothpick inserted into the center comes out mostly clean (a little custardy is fine).
Let the clafoutis cool slightly before serving. Dust with extra granulated sugar before serving, if desired.
