Preheat your grill to medium heat.
Lightly brush the baguette slices with olive oil and grill for 1-2 minutes per side, until lightly toasted and golden brown. Set aside.
Cut the Jersey cream cheese into four equal portions. Place each portion on a small piece of aluminum foil (large enough to wrap around the cheese).
Spoon 1 tablespoon of fig jam on top of each cheese portion.
Carefully wrap the foil around the cheese, sealing it tightly. This will prevent the cheese from melting and dripping all over the grill.
Place the foil packets on the grill and cook for 5-7 minutes, or until the cheese is warmed through and slightly softened.
While the cheese is grilling, prepare the prosciutto by tearing or slicing it into bite-sized pieces.
Carefully remove the foil packets from the grill. Open each packet and place a portion of the grilled cheese onto a toasted baguette slice.
Top with a piece of prosciutto and a sprig of fresh thyme (if using).
Drizzle with balsamic glaze if desired.
