Grate the cucumber using a box grater. If using regular cucumber, squeeze out excess water with your hands or a clean kitchen towel. This will prevent the cacik from becoming too watery.
In a mixing bowl, combine the yogurt, grated cucumber, minced garlic, and chopped mint.
Add the olive oil, lemon juice (if using), salt, and pepper. Mix well to combine.
Taste and adjust seasoning as needed. Add more salt, pepper, or lemon juice to your preference.
Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This step is optional but highly recommended for the best flavor.
Serve chilled as a side dish, appetizer, or sauce.

For a thicker cacik, use Greek yogurt and squeeze out more water from the grated cucumber.
If you don't have fresh mint, you can use 1 teaspoon of dried mint. However, fresh mint provides a much brighter and more vibrant flavor.
Cacik can be stored in the refrigerator for up to 3 days.
Serve with pita bread, vegetables, or grilled meats.
