In a large bowl, whisk together the flour, baking powder, salt, sugar, and bobotie spice mix.
In a separate bowl, whisk together the milk, egg (or flax egg), and melted butter (or oil).
Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix; a few lumps are okay.
Gently fold in the mashed and chopped banana.
Heat a lightly oiled griddle or large frying pan over medium heat.
Pour 1/4 cup of batter onto the hot griddle for each pancake.
Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles form on the surface.
Serve immediately with maple syrup.

To make your own Bobotie spice mix, combine: 1 teaspoon turmeric, 1 teaspoon coriander, 1/2 teaspoon cumin, 1/4 teaspoon ginger, 1/4 teaspoon allspice, 1/4 teaspoon cloves, pinch of cayenne pepper.
Add raisins or chopped nuts to the batter for extra texture and flavor.
If you want to make a vegan version, ensure you are using plant based milk and oil instead of butter.
