Marinate the Chicken: In a bowl, combine the chicken pieces with turmeric powder, ginger-garlic paste, and salt. Mix well and let it marinate for at least 30 minutes.
Prepare the Tempering: Heat oil in a large pot or Dutch oven over medium heat. Add mustard seeds and let them splutter. Then add curry leaves and sauté for a few seconds.
Sauté the Onions: Add the chopped onions to the pot and sauté until they turn golden brown, about 8-10 minutes.
Add the Green Chilies: Add the slit green chilies to the pot and sauté for 2-3 minutes, allowing their aroma to release.
Cook the Spices: Add red chili powder (if using), coriander powder, and cumin powder to the pot. Sauté for a minute, being careful not to burn the spices. Add a splash of water if needed.
Add the Chicken: Add the marinated chicken to the pot and mix well, coating the chicken pieces with the spice mixture.
Cook the Curry: Add 1 cup of water (or more if needed to cover the chicken partially). Bring the curry to a boil, then reduce the heat to low, cover the pot, and simmer for 25-30 minutes, or until the chicken is cooked through and tender.
Finish and Serve: Stir in the garam masala. Check the seasoning and adjust salt if necessary. Simmer for another 5 minutes. Garnish with fresh cilantro and serve hot with rice, roti, or naan.
