In a medium bowl, whisk together olive oil, lemon juice, cumin, coriander, ginger, turmeric, cinnamon, cayenne pepper (if using), salt, and black pepper.
Add the shrimp to the bowl and toss to coat evenly. Cover and refrigerate for at least 15 minutes, or up to 1 hour.
While the shrimp is marinating, prepare the pineapple salsa. In a separate bowl, combine diced pineapple, red onion, red bell pepper, jalapeño (if using), cilantro, and lime juice. Mix well and set aside.
