Cook the pork: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the sliced pork belly and cook until browned and crispy, about 5-7 minutes.
Add kimchi and sauce: Add the chopped kimchi to the skillet and cook for another 2-3 minutes, stirring occasionally. Pour the gochujang sauce over the pork and kimchi, and cook until the sauce has thickened slightly, about 2-3 minutes.
Assemble the donburi: Divide the cooked rice among four bowls. Top each bowl with the spicy kimchi pork mixture. Garnish with sliced green onions and toasted sesame seeds. Add a fried or poached egg if desired.
