On a lightly floured surface, stretch or roll out the pizza dough to your desired size and shape.
Brush the dough with olive oil.
Sprinkle the shredded cheddar cheese evenly over the pizza dough.
Distribute the sliced or diced ham over the cheese.
Scatter the drained pickled onions on top of the ham and cheese.
Carefully transfer the pizza to the preheated pizza stone or baking sheet.
Bake for 20-25 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Remove the pizza from the oven and let it cool slightly.
Drizzle Dijon mustard over the pizza.
Slice and serve immediately.
