Preheat oven to 450°F (232°C).
Prepare Nasi Goreng: Heat vegetable oil in a wok or large pan over medium-high heat. Add minced shallots, garlic, and chili. Stir-fry until fragrant (about 2 minutes).
If using shrimp paste, add it to the pan and cook for another minute until fragrant.
Add the cooked rice to the pan and break it up with a spatula. Stir-fry for 2-3 minutes.
Add sweet soy sauce (kecap manis), soy sauce, and mixed vegetables. Stir-fry until well combined and heated through (about 3-5 minutes). Taste and adjust seasoning if needed.
Stretch or roll out the pizza dough to your desired size and thickness. Place the dough on a baking sheet.
Spread the Nasi Goreng evenly over the pizza dough, leaving a small border for the crust.
Sprinkle the shredded mozzarella cheese evenly over the Nasi Goreng.
Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
While the pizza is baking, fry the eggs to your desired doneness.
Remove the pizza from the oven and top with the fried eggs.
Drizzle with sambal oelek and garnish with sliced green onions.
Slice and serve immediately.
