A unique hybrid dessert blending the chewy texture of mochi donuts with the savory umami flavors of ramen. These donuts are infused with ramen broth and spices, then fried to a golden crisp and glazed with a sweet and savory sauce.
In a large bowl, whisk together the sweet rice flour, all-purpose flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the egg, ramen broth, sesame oil, garlic powder, ginger powder, and white pepper.
Pour the wet ingredients into the dry ingredients and mix until a smooth dough forms. The dough will be sticky.
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
Transfer the dough to a piping bag (optional, you can also use a spoon). Pipe small rings of dough into the hot oil. You can also form small balls with a spoon and drop them into the hot oil. Be careful not to overcrowd the fryer.
Fry the donuts for 3-4 minutes per side, or until golden brown and cooked through. They should puff up nicely.
Remove the donuts from the oil and place them on a wire rack to drain.
While the donuts are cooling, prepare the glaze. In a small saucepan, combine the soy sauce, mirin, and honey. Heat over medium heat until the mixture comes to a simmer and slightly thickens, about 2-3 minutes. Remove from heat.
Dip the cooled donuts into the glaze, coating them evenly.
Sprinkle with sesame seeds and nori flakes (optional).
Serve immediately and enjoy!

Be careful when frying the donuts, as the hot oil can splatter.
Adjust the amount of ramen broth and spices to your liking.
