**Prepare the Dalgona Candy:** In a small saucepan over medium heat, melt 2 tablespoons of sugar, stirring constantly until completely melted and amber in color. Be careful not to burn the sugar.
Remove the pan from the heat and quickly whisk in the baking soda. The mixture will puff up and turn light brown. Whisk vigorously for about 5-10 seconds until evenly combined.
Immediately pour the Dalgona mixture onto a baking sheet lined with parchment paper. Let it cool and harden completely. (about 5-10 minutes)
Once cooled and hardened, break the Dalgona candy into small pieces. You can use a knife or your hands.
**Prepare the Latte:** In a mug, whisk together the instant coffee powder, hot water, and 2 tablespoons of sugar (and vanilla extract if using) until frothy and light in color. This creates the coffee base.
Heat the milk in a saucepan or microwave until hot but not boiling. Froth the milk using a milk frother or whisk vigorously.
Pour the hot milk into the mug with the coffee base. Top with frothed milk.
Sprinkle the crushed Dalgona candy generously over the top of the latte.
Serve immediately and enjoy the sweet and crunchy combination!
