Cook the noodles according to package directions. Drain and rinse with cold water to stop the cooking process. Set aside.
Prepare the peanut sauce: In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey or maple syrup, minced garlic, grated ginger, and red pepper flakes.
Gradually add warm water, 1 tablespoon at a time, until the sauce reaches your desired consistency (it should be pourable but not too thin).
Arrange the noodles on a large serving platter in the shape of a Christmas tree. Start with a wide base and gradually narrow it towards the top.
Drizzle the peanut sauce evenly over the noodles.
Decorate the noodle tree with the colorful vegetables: Arrange broccoli florets to resemble branches, use cherry tomatoes as ornaments, sprinkle diced yellow bell pepper and shredded carrots for added color, and scatter edamame throughout.
Garnish with sliced green onions and sesame seeds.
Top the tree with a slice of star fruit for the star on top, or create a star shape from the yellow bell pepper.
Serve immediately or chill for later.
