A comforting apple crumble with a unique Jersey twist - a layer of rich, dark, Black Butter.
Preheat oven to 180°C (160°C fan/ Gas Mark 4). Grease a 9-inch baking dish with butter.
In a large frying pan, melt 50g butter over medium heat. Add the sliced apples, brown sugar, cinnamon, and lemon juice. Cook for 5-7 minutes, stirring occasionally, until the apples are slightly softened but still hold their shape.
Remove the apple mixture from the heat and spread evenly in the greased baking dish.
Spread the Black Butter evenly over the apple mixture. This will create a rich, dark layer beneath the crumble.
To make the crumble topping, combine the flour, rolled oats, demerara sugar, and grated Jersey Royal potato in a large mixing bowl.
Add the cold, cubed butter to the bowl. Using your fingertips, rub the butter into the dry ingredients until the mixture resembles coarse breadcrumbs. Avoid overmixing to keep the crumble texture light.
Sprinkle the crumble topping evenly over the Black Butter layer.
Bake in the preheated oven for 30-40 minutes, or until the topping is golden brown and the apple filling is bubbling.
Let the crumble cool slightly before serving. Serve warm with Jersey cream or vanilla ice cream.

If the crumble topping starts to brown too quickly, cover the dish loosely with foil for the last 10-15 minutes of baking.
For a more intense Black Butter flavour, warm the Black Butter slightly before spreading it over the apples.
Feel free to add other seasonal fruit to the apple mixture, such as blackberries or plums.
The grated Jersey Royal potato adds a delicious subtle sweetness and interesting texture to the crumble. Don't skip it!
