Preheat oven to 450°F (232°C). If using a pizza stone, place it in the oven to preheat as well.
Prepare the french fries according to the package instructions. They should be cooked until golden brown and crispy.
While the fries are cooking, stretch or roll out the pizza dough to your desired shape and thickness.
Brush the pizza dough with olive oil.
Sprinkle the mozzarella cheese evenly over the dough.
Top with the cooked french fries, spreading them evenly over the pizza.
Scatter the cheese curds over the french fries.
Arrange the Montreal smoked meat on top of the cheese curds and fries.
Bake the pizza for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Remove the pizza from the oven and let it cool for a few minutes.
Immediately before serving, drizzle the hot beef gravy generously over the pizza. Be sure to get it on the fries and cheese curds!

If you don't have Montreal smoked meat, you can substitute with pastrami or corned beef.

To elevate the gravy, consider adding a pinch of smoked paprika or a dash of Worcestershire sauce.
