Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
In a separate bowl, cream together the softened Jersey butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the Jersey milk, beginning and ending with the dry ingredients. Mix until just combined.
Fold in the diced Jersey apples and mashed Jersey Royal potatoes.
Pour the batter into the prepared cake pan and spread evenly.
Bake for 45-50 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
While the cake is cooling, prepare the brown sugar glaze.
In a small saucepan, combine the brown sugar and Jersey butter. Cook over medium heat, stirring constantly, until the butter is melted and the sugar is dissolved.
Remove from heat and stir in the Jersey milk. Gradually add the powdered sugar, whisking until smooth.
Pour the glaze over the cooled cake. Let the glaze set before serving.
