In a medium bowl, combine the diced cucumber, red onion, cilantro, and mint.
In a small bowl, whisk together the lime juice, olive oil, honey (or agave), curry powder, ground cumin, salt, and pepper. Add chopped green chili if using.
Pour the vinaigrette over the cucumber mixture and toss gently to combine.
Taste and adjust seasonings as needed. Add more lime juice for extra tang, or a pinch more salt or pepper to taste.
